Angus ground beef seasoned with homemade enchilada sauce and layered in a hearty casserole with black beans, rice, peppers, onions, cheese and corn tortillas, served with red and white cabbage slaw with cilantro vinaigrette
Casserole: if possible, allow casserole to come to room temp. before heating. Pre-heat oven to 375. Heat casserole covered for 45-6o min. until warm. To test if casserole is warm all the way through, insert knife into center of casserole, if blade is hot to touch then casserole is ready; if not, it needs more time. Serve with additional enchilada sauce.
Slaw: toss slaw with dressing to taste.
