Crispy Chicken Parmesan with Mozzarella

Chicken: if possible, allow chicken to come to room temp. Preheat oven to 375. For best results heat in single layer on foil-lined baking sheet, sprayed with non-stick spray or rubbed with a little oil. Spoon some sauce over chicken and top with mozzarella, heat until chicken is warm, and cheese is melted, about 15 min. (Microwave: heat 2-3 min. or until hot.)

Penne: heat in medium pan on stove over medium heat, add 1-2tbsp of water (or extra sauce) and stir frequently until warm, 5-8 min. Serve chicken over penne.
