Crispy Eggplant Parmesan

If possible, allow eggplant to come to room temp. Preheat oven to 375. For best results heat in single layer on foil-lined baking sheet, sprayed with non-stick spray or rubbed with a little oil. Spoon some sauce over eggplant and top with mozzarella, heat until eggplant is warm, and cheese is melted, about 15 min. (Microwave: heat 2-3 min. or until hot.)
