Cuban Black Bean Soup


the soup my Mom always made for celebrations - a classic black bean, salt pork and green bell pepper and cumin soup, served over rice and topped with sour cream and diced red onion; serves 2


Soup: place soup in small saucepan over medium heat, stir occasionally until warm, about 10 minutes. Rice: DO NOT HEAT PLASTIC IN OVEN. Heat rice with 1-2 tbsp of water in saucepan over medium heat, stirring until warm, about 5-8 minutes (Microwave: place damp paper towel over container and heat until warm). Serve soup over rice, top with sour cream and onions.
