Grilled Coconut Chicken


grilled chicken breast marinated in soy sauce, coconut milk and lime juice, served with chili garlic sauce with mint and scallion and a side of soy-roasted vegetables and white rice


Chicken: if possible, allow chicken to come to room temp. Preheat oven to 350. For best results, heat in a single layer on a baking sheet sprayed with non-stick spray. Heat for 10-15 min. or until warm. Serve with chili garlic sauce. Rice & vegetables: heat on stovetop over med. heat with one tablespoon of water until warm, 5-10 min.
