Vegetarian Southwest Stuffed Peppers

Description

red bell peppers stuffed with black beans, quinoa, jack and cheddar cheeses, corn, onions and mild green chilis; serves 2

Instructions

If possible allow peppers to come to room temp. Preheat oven to 350. Heat peppers in single layer on foil lined baking sheet. Heat 20-25 min. until peppers have softened and filling is hot.
