Preparation

Allow casserole to come to room temp. Preheat oven to 375. Remove plastic lid and cover with foil sprayed with non-stick spray. Bake for 30-40 min. Remove foil and bake additional 15 min. until cheese is melted and sauce is bubbling. Insert knife into the center and remove. If knife blade feels warm to the touch, casserole is ready! Serve with additional enchilada sauce. Slaw: toss slaw with peppadew dressing.
