Chicken breast baked with a crispy crust of buffalo breadcrumbs, topped with carrot and celery slaw, served with housemade blue cheese dressing and elote-style roasted sweet potatoes and corn with cilantro-lime sauce

Preparation

Preheat oven to 375°F. Heat chicken in a single layer on a lightly oiled, parchment or foil-lined baking sheet. Heat until chicken is warm and crispy, about 15-20 minutes. Sweet potatoes: Heat uncovered for about 10-15 minutes, mix with cilantro lime sauce. Serve chicken with carrot & celery slaw, buffalo sauce, blue cheese dressing, and sweet potato blend.
