Fluffy quinoa baked with tender roasted chicken breast, cauliflower, potatoes, sharp cheddar cheese and baby spinach, served with mix greens with pepitas, sunflower seeds, cranberries and citrus dijon dressing

Preparation

Allow casserole to come to room temp. Preheat oven to 375. Remove plastic lid and cover with foil. Bake at least 40-50 min. until hot, remove lid for last 15 min. of heating. Salad: Toss greens and toppings with dressing to taste.
