Fluffy quinoa baked with tender roasted chicken breast, cauliflower, potatoes, sharp cheddar cheese and baby spinach, served with mix greens with beets, spiced sunflower seeds, and citrus vinaigrette

Preparation

Casserole: Allow to come to room temp. Preheat oven to 375°F. Remove plastic lid and cover with foil. Bake for 45–50 min, removing foil for the last 15 min of heating. Salad: Toss greens with beets, sunflower seeds, & vinaigrette.
