Just like from your favorite red sauce joint - chicken breast baked with a crispy crust of parmesan and panko breadcrumbs, served with caesar salad with house-made croutons

Preparation

Preheat oven to 375. Allow chicken to come to room temp. For best results heat in single layer on foil-lined baking sheet sprayed with non-stick spray or rubbed with a little oil. Spoon some sauce over chicken, then top with mozzarella. Heat until chicken is warm and cheese is melted, about 15 min. Salad: Mix kale blend with croutons and dressing to taste.
