Crispy Pecan Chicken

If possible allow chicken to come to room temp. Preheat oven to 375. Heat chicken in single layer on baking sheet sprayed with non-stick spray. Heat chicken at least 10-15 min. until warm. Serve topped with remoulade. Toss salad ingredients with dressing to taste.

Chicken (crust: pecans, cornmeal, flour, paprika, salt, pepper, eggs, buttermilk), remoulade (mayonnaise, garlic, parsley, celery, scallion, capers, horseradish, Dijon, Worcestershire, Tobasco, lemon juice, champagne vinegar, honey, paprika, white pepper, sea salt), sweet potatoes (yellow onion, butter, salt, pepper, turbinado sugar, cinnamon, nutmeg, allspice, blended oil)
