Greek Shrimp with Feta & Tomato

Sweet shrimp simmered in a sauce of tomatoes, bell peppers, onions and white wine, topped with feta and served with couscous salad with lemon and dill

Preparation

Heat sauce in saucepan over medium heat. Once sauce is warm, add shrimp. Heat until shrimp are hot, about 3-5 minutes. Remove saucepan from heat and stir in half of feta cheese. Couscous: Microwave until warm or heat in separate saucepan over low heat with 2-3 tbsp. of water or oil, about 5 min. Serve shrimp and sauce over couscous topped with remaining feta cheese.
