Grilled chicken marinated in lemon and fresh herbs, served with green olive and feta salsa verde and potato roesti, a shredded potato pancake seared until crisp (like a hearty dinner hash brown)

Preparation

Chicken: Preheat oven to 350°F. Heat chicken on a lightly oiled, foil or parchment-lined baking sheet for 15-20 min. Roesti: Add 1-2 tbsp of oil to skillet and heat over medium heat. Add roesti and sear until crisp, about 6 minutes per side. Slice chicken, spoon salsa verde over top, and serve with roesti on the side.
