Grilled chicken marinated in lemon and fresh herbs, served with green olive and feta salsa verde and potato roesti, a shredded potato pancake seared until crisp (like a hearty dinner hash brown)

Preparation

Allow chicken to come to room temp. Heat oven to 350. For best results, heat chicken in single layer on lightly oiled baking sheet until warmed through, 10-15 min. Roesti: add 1-tbsp of oil to skillet, heat oil over med. heat. Add roesti and sear until crisp, about 3-5 min., flip and sear on other side until crisp, another 3-5 min. Slice chicken and serve topped with salsa verde.
