Angus ground beef seasoned with homemade enchilada sauce, layered in a hearty casserole with black beans, rice, bell peppers, onions, jack and cheddar cheese and corn tortillas, served with red and white cabbage slaw with radishes, carrots and piquillo pepper vinaigrette

Preparation

Preheat oven to 375. Allow casserole to come to room temp. Remove plastic lid and cover with foil sprayed with non-stick spray. Bake for 30-40 min. Remove foil and bake additional 15 min. until cheese is melted and sauce is bubbling. Insert knife into the center and remove. If knife blade feels warm to the touch, casserole is ready! Serve with additional enchilada sauce. Slaw: Toss with vinaigrette to taste.
