    Fluffy quinoa baked with roasted cauliflower, potatoes, sharp cheddar cheese and baby spinach

    Preparation

    Preheat oven to 375. Allow casserole to come to room temp. Remove plastic lid and cover with foil. Bake for at least 45 min. until hot, remove lid for last 15 min. of heating to allow cheese to melt.
