Eggplant baked with a crispy crust of parmesan and panko breadcrumbs, topped with house-made marinara and mozzarella

If possible, allow eggplant to come to room temp. Preheat oven to 375. For best results, heat eggplant in a single layer on foil-lined baking sheet, sprayed with non-stick spray or rubbed with a little oil. Spoon some sauce over eggplant and top with mozzarella, heat until eggplant is warm and cheese is melted, about 15 min.
