Roasted salmon topped with lemony green goddess sauce, served with couscous with tomato, and zucchini

Preparation

Salmon: Preheat oven to 350°F. Place salmon on foil or parchment-lined baking sheet and heat for 10–12 minutes, until warm to the touch. Check after 5 minutes. Serve with cucumber green goddess sauce. Couscous: Serve at room temp. If preferred warm, heat with 1 tbsp of oil or water over medium heat for 5 minutes.

For best quality, enjoy all meals by Wednesday, or freeze if
applicable.

Roesti: Heat 1 tbsp oil in a skillet over medium heat. Add roesti and sear for 3–5 minutes per side, until golden and crisp.

Air Fryer Tip: Roesti is great in the air fryer! Cook at 350°F for 4–6 minutes, flipping halfway. Salmon can also be heated in the air fryer at 350°F for about 5–7 minutes.
