Tilapia coated with crispy panko breadcrumbs, served on corn tortillas topped with borracha tomato salsa, lime chipotle crema and shredded cabbage, served with dirty rice with pinto beans, onions, corn and hatch green chilies

Preparation

Heat oven to 375 °F. Tilapia: Heat on lightly oiled baking sheet for 15 min. until warm and crisp. Tortillas: Wrap in foil, heat in oven 5-10 min. Rice: Heat rice on stovetop over med. heat with 1-2 tbsp of water, stirring occasionally until warm, 5 min. Salsa: Warm in microwave w/ lid cracked open for ~30 sec. Assemble: Break tilapia into pieces and place on tortillas, top with salsa, crema and cabbage.
