To bake at home, a deceptively delicious superfood side dish - 2 red bell pepper halves stuffed with herb roasted zucchini, grape tomatoes, caramelized onion, feta and quinoa

Preparation

Heat oven to 350, for best results heat peppers in single layer on foil lined baking sheet. Heat at least 20-25 min. until peppers have softened and filling is hot.
