(Who's Ed Giobbi, and what's his lasagna all about? Ed Giobbi is an Italian - American artist and cookbook author and contemporary of other seminal 70's cookbook authors like Paul Prudhomme, James Beard, Paula Woffert and Diana Kennedy. The beauty of this lasagna is that he took the classic American red sauce lasagna, and the classic Italian bechamel lasagna, and made it into ONE LASAGNA. Which is particularly American, and we think, delicious.)

If possible, allow lasagna to come to room temp. Heat with lid on in 350 degree oven for 30 min., remove lid and heat for at least 20 more min., until warm.
